    Chicky Chicky Parm Parm

Guys! I’m a genius now. (Call Mensa!) I wanted chicken Parmesan last week, but couldn’t find a good recipe that would be either low-carb, keto, or THM/S… so I started thinking 🤔 And Eureka! I realized that I could make a totally solid chicken Parmesan breading out of pork rinds, almond meal, Italian seasoning, and of course, Parmesan! So, here’s what you need to do! Supply list: Food Processor Meat Hammer 3 oz Pork Rinds 1/4 cup Almond meal 1 cup Parmesan Cheese Italian Seasoning Salt and pepper (to your preference) 2 eggs 1.5-2 lbs Chicken Breast (thinly sliced) Coconut oil for frying Here’s what you need to do: Put…

    Brown Bag November Challenge

For the last few years I have been on a journey toward minimalism. Probably not the “over-the-top-only-own-one-chair-and-a-lamp” type, but I want to keep my earthly possessions to a minimum for sure. I always say “all this stuff could burn up in a fire tomorrow and we would carry on with our lives and be fine.” So, last November I started thinking about how much unnecessary stuff we had accumulated over the year and how Christmas was coming and we were going to get more stuff than we could imagine. 🎄I could feel the walls closing in on me. I don’t want to deprive my children of having nice Christmas memories…

    First Time Using Dry Shampoo

I have been hearing people singing the praises of dry shampoo for a couple years now. Its all “OH MY GOSH BECKY, You’ve never used DRY SHAMPOO?” and “Are you, like, living under a ROCK or something???” I know, I know. I don’t keep up with the trends all that well. But, in my defense, I have a legit note from my dermatologist that I should not wash my hair more than 1-2 times per week. I generally land a fresh washed head of hair about 5 days in. My hair almost never looks dirty, unless I have exercised and worked up an amazing, fat burning, SWEAT! 🙂 Soooo…I’m on…

    McCormick’s Creek Spring 5k

Happy 5K season SnapBackers! Our first ever MommaSnapsBack running group formed today. Ok, so, Emily and Cheri ran, what I did could not really qualify as running, but I DID FINISH! That’s important!!! 😀 I told these ladies (very dramatically, because I just AM dramatic) to RUN  AHEAD and to not let me hold them back. haha. I’m proud of them! They both had great run times. There was a point during the race where I got lapped by at least a 1 mile gain, by a 9 year old from my daughters class!!! LOL 🙂 So, I SPRINTED to gain ground. That sprint lasted .19 mi. lol. Hey, I…

Kick Soda to the Curb in 3 steps

This is a “mind over matter” situation. No hypnotherapy or freaky deeky voodoo. Plain and simple willpower and making good choices every single time. When my husband and I were dating, we would sit around and dream up our future life and what it would look like. His sister, Kim, had 3 kids and they all preferred to drink WATER when given drink choices!!! This confused us, but we admired them. The more we thought about it, the more we wanted our future kids to drink water instead of soda. We decided that we needed it to be a part of our family culture that we are just a household…
