Shrimp Stacks

Ingredients

  • 2 pounds cooked shrimp, diced
  • 1 Avocado, mashed
  • 1 Cucumber, diced
  • 2 cups Brown Rice, cooked
  • 1/2 cup Sour Cream
  • 2 teaspoons Sriracha
  • Soy Sauce (optional)
  • pinch Asian Basil (optional)

Instructions

  1. Stacks- Layer ingredients into a small dish, like a measuring cup or prep bowl. Line cup with plastic wrap so the shrimp stack will come out with ease. Layer as follows -Mashed avocado first -Next Cucumber -Followed by Shrimp -Lastly, Brown rice
  2. Pack each layer in tightly, so that when turned over, the stack will keep its shape.
  3. Carefully flip onto plate that will be used, once it has been flipped, it can be tricky to move or reposition without losing the stacked shape.
  4. Spicy cream sauce- mix sour cream and sriracha in a dish, sriracha can be used more or less depending upon your taste preferences. Once mixed, pour into a squeeze bottle using a kitchen grade funnel. Drizzle eloquently!
  5. Can also be garnished with a soy sauce drizzle or Asian basil
